If I got a first Gen 17" MBP, could I replace the logic board with the last gen (non unibody) logic board?
Was the casing of the "classic" MBP unchanged from the first gen to the last generation?

Doubt it. Either it would be too big/small and even if you got the sizing ok, there's the problem with ports - does it have the same number of ports located at the same spots?

It appears to have the same size and the same port locations, but I am wondering about AirPort & Bluetooth antennas and cooling systems.
(the logic board would be from a Core 2 Duo 17" MBP).

Do not think this will work. If you are referring to the 17" Core Duo casing, a new 17" Core 2 Duo logic board will not fit. The Core duo lacks a firewire 800 port.
