Hello there. I know there's been a lot of discussion on note apps already that asking another question is really embarassing... but here we go..

I'm looking for a best ipad pro note taking app for a typist. I rarely hand write, so any feature for hand writing is not important. The contents of note taking is mostly text only.
There are several features that I'm looking for though..

1. Easy to search by text
2. Easy to back-up all the notes to pdf or doc file to a local storage at once.
3. After note is taken, I'd like to lock it not for privacy protection, but to make it read only (no longer editable)
4. I prefer not to use MS Office or Apple Pages, I like how Apple notes handles an individual notes and its simplicity.

As you can see, I'm more concerned about backing notes up easily/both on cloud and local.
After a note is taken, I don't need to edit anymore and make sure to not mistakenly erase or edit the contents of it.

Up to now, I've been using Apple note app which meets some requirements, but it's absolutely horrible on #2(only on icloud, easy to accidentally erase the contents, and no simple way to export numerous notes to PDF) and #3 (locking the note put privacy protection. I just want to make it read only).

I also agree, because I was using the Apple Notes app too, and I wanted to back all of them up. The only hope that I can figure out, is how you will have to use iCloud, but that would mean purchasing more storage space. Maybe you'll look at this article and hope it helps!

Notability is good and has auto backup to pdf on iCloud, Dropbox, onedrive etc - it’s very powerful. It’s not great for text only notes though - much better for ink.

I’ve recently started using Agenda because it links to calendar appointments which is helpful. That also has some good export to PDF options, and the sync is very good (and iCloud based, which i prefer). Their pricing model is very thoughtful too. And it has some good formatting options, tagging etc.

I agree with marmiteturkey, Notability is not a good choice at all (inspite its unconditional love over here).
Perhaps take a look at Notebooks. Without a doubt a typist app.
