I am sure there many journaling apps. I am looking for an app that I can hand write using the Apple Pencil. I want to be able to create different journal books almost like a daily diary.

Here are some template available for many different note apps. I use Notability and love it. Plus Notability has a template store as well.
While viewing your Library, click/tap on the Import icon in the upper right corner.
