I'm looking for a way to keep a bunch of notes on my iPhone - something along the lines of the old HiNote (or something like that) which I used to have on my Palm.

I would love to be able to have a list of subjects, and be able to tap on that to get to sub-lists of info, and sub-sub lists; etc...

Anyone know if there's an app out there that does this well? I have surfed around here and on the App Store, but just came away more confused...

I don't even know if what I'm asking makes sense - please help!

Assuming you're talking about on a 3G try EverNote. It's free in the App Store. You can also get the desktop version HERE

Also try FileMagnet

Filemagnet looks pretty good too. Strictly speaking it is for transferring files of different types to your phone but there is no reason it cannot be used to store a collection of textpad files.

It allows them to be grouped together also.
 
Zenbe and Evernote are not doing it for me.

I'll try filemagnet.
