I updated to 5.0 this morning, and it set my iphone up as if it were a new phone. It didn't keep any apps/settings/etc. In itunes, it looks like all of my old stuff is under "other". How can I get everything back? What a disaster this 5.0 launch has been...

Not a disaster dude, but a bit of a mistake by you, probably. You should easily be able to restore your iPhone from a backup taken before you updated. In fact, as part of the update process, a backup should have been made. So it's no biggie. Take a breath and restore.
Also, I hardly think this is a disaster. Any .0 release has bugs, and most that people have identified are not show stoppers, merely people disproportionately freaking out about them.

It did not keep the restore point from before the update. So, I restored from my previous back up from a month ago, and even after that none of my apps are there.
When I upgraded a big box came up with the yellow ! that said "ALL OF YOUR APPS, MEDIA, PHOTOS, VIDEOS, etc... will be deleted. Please make sure you have synced your apps..... before you begin this upgrade"
That sucks. Did you make sure that the sync apps checkbox was ticked on the summary page? I believe some people have had an issue with that. If the backup exists, you should be able to restore your apps and their data from that.
Always a good idea to ensure you have a full reliable backup to restore from before doing any sort of update like this..

Mine RESTORED all of my apps and settings, but it RELOADED all of my apps and music again onto the device. meaning it knew what to restore but it did wipe everything from my device first. Is this normal for the iOS 5 update?
It's only irritating because I have almost 50 GB of music using the 128 kbps option on my iPad 2 and it takes like 10 hours to restore load everything onto the iPad.

Well, no, it's not normal at all. Not sure what to suggest. It's usually pretty straightforward to update and then restore apps and settings from a backup without issue - not sure what you've done bud.

This is exactly why this launch was a disaster. I've owned every iPhone since the original, and always updated on launch day. NEVER ONCE did any of the other updates take 10 hours to download, completely wipe all your apps/settings/etc... unbelievable

No one should be having an issue where they permanently lose things like photos/videos...
I'm not saying they should, but things like photos and videos should always be backed up outside of iTunes though, using iPhoto etc. It's a common sense precaution. Relying on the iPhone backup mechanism in iTunes is simply not enough.
Same thing happened to me with the update - 90% of my apps were all gone after the update. I thing with me was, after the update my iTunes popped a 'restoring apps' window and it was only pulsing for a long time without any particular response - I thought my iTunes was stuck and quit it. At the time my iPhone didn't have any media carried over either. I re-opened iTunes and it started restoring my media and the rest of the restore - except my apps.
I've never really 'synced' with my computer and everything was manually managed, but when I tried checking the Sync Apps box, apparently somehow iTunes had saved all my app data and now all my apps are back. Remember to run restore again once all your apps make it to your iPhone - the second restore will put all your apps back in its folders. Good luck

I updated iPhone 3GS and iPad 2 today, and I had serious problems with both of them. I didn't remember to take a manual back-up of iPhone 3GS (maybe because all previous updates have been very smooth). After several times trying to update & back-up correctly and seeing all sorts of alert number codes, I gave up and restored the iPhone as a new device, and began to download apps in it and all the music got deleted too. Mail/contacts/calendar is synced to Exchange, so I didn't have trouble with those.
Well, after this fiasco, I did take a manual back-up of iPad 2 before updating. But similar thing happened, I tried to update & restore about 5 times, and every time I got a message that back-up can't be used (or something like that) and some random alert number. Maybe sixth try was successful and everything worked correctly (but I still don't understand why I had to spend 2 hours watching iTunes transfer all the apps to iTunes library, then update the device and then spend 2 hours putting the same apps back to iPad 2).
