Hi, I wonder if anyone can help. I recently jailbroke my 2g Edge 8gb (2.2.1 firmware) Iphone using quickpwn. This worked fine. Today however, I decided to try to go back to the official 2.2.1 firmware by using the restore option in Itunes. This worked fine, I re synced all my movies/music and Applications apparently successfully, however when I looked at my phone I couldn't see any application icons, even though they have used up space on the phones memory. If I go in to the app store on the phone and try to re download, it tells me they're already installed...

Can anyone tell me if this is a solveable problem, or have I buggerred this part of the phone for good...!!!

While you were jailbroken, did you hide any of your apps using "poof" or SBSettings, or did you put them into folders using Categories? If you did, then they would still remain hidden once you restore to regular firmware.
 
If you did use categories to organize your apps, you can try to make them appear by

Going to Settings>General>Restrictions>Enable Restrictions
Create a passcode and confirm it.
Now Disable Restrictions. (and confirm your passcode).

So basically you just Enable restrictions, then disable them again. All of the apps should be visible again. It should work if they were hidden with categories or poof.
