Is the TB write issue a legit reason to opt for 1TB even if my workflow would only warrant a 512GB?

I am pushing an XDR Pro Display as well, although SSD wouldn't really matter in that aspect. Will go 8-core however for gpu and cpu.

There is no "TB SSD write issue for all users. As such, you shouldn't have any problems.

If your workflow only needs 512GB of storage, I see no reason to get 1TB, unless the price is right.

Could someone please fill me in on this TB issue?
Some Mac users are seeing what might look like excessive writes to their SSD. I'd point you to the thread but the thread is such a mess that there is little point. The only good thing about it is that the first item in the thread is now a wiki post and several people have contributed to help others reduce their excessive writes.

I mostly wouldn't worry about it. It is unlikely to affect you.

Also, for some reason all M1 Macs in the Refurb store are listed as having 8GB even if the spec sheet says otherwise. I scored a great deal on an M1/16/512 Pro

I would say that, if anyone is concerned about excessive writing to the SSD - and they shouldn't be - then they should opt for 16gb of RAM. That would address the matter more efficiently than a bigger SSD.
