I have in our bedroom a LG 49UJ6200. It supports UHD 3840x 2160. Refresh rate is 60HZ. HDMI is HDCP 2.2. I am thinking of getting a M1 Mini with 512/ 16gig. Will this combo work? Thanks for any input.
 
Yes, that will work - I drive 2 displays (WQHD + UHD) on my M1 base Mini.

Is there a reason to get 16GB on it ?

My 8GB is more than enough (replaced a 2012 Mini w/ 16GB) and runs circles around the Intel Mini....

I always max out my ram. Old habit. When I bought my first Mac Mini in 2006 first thing I did was put 2 gigs of ram in it and put a 80gig HDD in it. I still have it. It’s in storage in pieces I would love to get it running again. And see if I could get the data like photos and old emails off it. But that’s a different story.
