I've observed that, after leaving my M1 MacBook Air all night sleeping, plugged to the power supply, after waking it up, it has been doing a lot of things "network-wise", I mean, look at the data indicator:

That screenshot is just after waking it up, the flat lines of the right are from the few seconds awake.
I've unticked the option of "keep network activity while sleeping", just to see if next time it will have this behaviour or not.

What do you guys think about this? Could an app be spying me sending data while the computer is sleeping?

If you installed Chrome, remove it and all of its components. If you haven't put Chrome on there, then it's a lot trickier.

No Chrome, Just Safari and Firefox 84 installed; however, after disabling the option of "access network while sleeping" on Battery (System Preferences), now it shows a flat line:
