Can I do 2 screens with the Mac Mini M1? What about when used with a dock like the Elgato?

I am actually using three monitors with my M1 mini.
I am using this dock with display link software, works great.
My 27' 4K monitor is plugged into the mini's HDMI port, my other two monitors which are 23' 1080p connect to the dock via DVI and HDMI. The dock itself plugs into one of the mini's USB 3 ports.

I have a similar setup with a Dell D6000 dock using DisplayLink (to 2 x 1080p monitors). Performance is fine for everything I need, but might not be great for gamers.

Indeed I don't expect it would be sufficient for gamers however for general use it's more than acceptable.
