I currently have a 2017 iMac 27 that has 2tb of storage. Current storage used is well over a TB. I'm considering transitioning to a new Mini (no real need to more just a want to) but the current storage offerings with the Mac mini obviously won't cut it and I'll need to have an external drive.

Any recommendations on drives that those in the same boat have purchased, and what sorts of files have you put on the external?

Are you looking at HD’s or SSD recommendations? Apple does have a 2TB internal option. I’ll be going external as ordered a measly 512GB.

Well it is always better to have wiggle room on an SSD. They do better the more space that is left on them. I'd think 1TB is a good place for anyone. Most people can put a lot of their stuff on an external drive and leave the main drive for applications and working files.

If you don't want to go external storage, you're usage already suggests 2TBs is what you need (for growth).

I saw that....not crazy about paying $600 to go from 512 to 2tb......will def be looking at SSD.

I do a lot of video editing, so I went for the 2 tb version in order to keep the FCPX library that I'm currently using directly on the system SSD for the best speed. I have a separate 12 tb TB 3 drive for storing external media. Since I try to work on the system drive as much as possible, bigger is better for me.
