I’m somewhat curious about the external display capabilities of the MacBook Pro (2023) with M2 Max

Apple’s support page indicates that it can support:
  • One display up to 6K at 60Hz over Thunderbolt, and two displays up to 6K at 60Hz over HDMI

I’m curious how that can be achieved, when there is only a single HDMI port on the machine. It certainly isn’t clear from this document.

I’ve tried reaching out to Apple support via Twitter, but they’re being uncharacteristically quiet on the subject..

I might guess that a thunderbolt to HDMI adaptor is required for the second HDMI display, perhaps?

USB-C to HDMI (not Thunderbolt)

But I still don't understand your question. The capabilities are laid out in the link you posted.
 
I have two displays connected to my MBP Max 16 via Orico TB3 hub. 3449x1440 60Hz via DP, and 1920x1080 60Hz via USB-C to HDMI adaptor.

You would still need a USB-C to HDMI (or even a TB4 to HDMI) adapter for the second HDMI connection.

I took that to mean I couldn’t then use one of the thunderbolt/usb-c ports for the second HDMI display (because in my mind, that’s really two displays over thunderbolt, even if one is using an adaptor).

Just read the link exactly how it's laid out. Decide how many displays you want to connect, and the details under each will lay out how to connect (that many), and the resolution(s) supported for that number of displays.
 
Is it possible to achieve 5k using the HDMI port on a 16” M2 Max MBP? If so, recommendations on the cable needed? Manufacturer?
