How can I be 100% sure that when I close the lid to my new M3 MacBook Pro that the computer actually goes to sleep? I find myself feeling better just to leave it open and put it to sleep by clicking on the Apple in the upper left-hand corner, but I would rather just shut it

The machine automatically goes to sleep when closed, but if you are worried, just shut it down and close it. It takes no time at all to boot.

I've noticed that when I just close my M3 MacBook Pro to sleep, it still records CCTV footage and receives emails!

It's great and a useful feature for me meaning I don't have to leave machines on running all night to record footage
