With the announcement of the new MacBook Pro's with M3 chipset I decided to finally upgrade my Intel machine. I'm stuck between the 2 M3 Max models spec'd below:

Option 1: M3 Max with 14-core CPU | 96GB RAM | 2TB SSD

Option 2: M3 Max with 16-core CPU | 64GB RAM | 2TB SSD

They're nearly identical in price. I do a lot of video work with After Effects, Premiere, FCP, and Motion as well as Photoshop and Illustrator. Would I do better with increased memory or the extra cores? Can somebody explain the real-world differences between the two models?

You'll hardly notice a few more or less CPU and GPU cores, but if the RAM isn't enough you'll have a bad time.
