Mac Book Pro Newbie

Hey members, newbie here with a new Mac Book Pro and I Phone 4S and I'm having some very frustrating issues that I hope I could get some insight on:

1. I cannot get Iphotos or apps from Mac Itunes/App store to sync from Mac to Iphone
-think I need to delete Iphoto cache??

2. Lost all apps on Ipad when it upgraded to iOS 5

3. I added a note on my Mac last night, got sent email, thinking I had accidentally changed a setting, deleted email, and now notes on Iphone are gone

4. Have previous Iphone 4 and cannot transfer info from that phone into Itunes in order to sync with new Iphone 4S...says it will replace with current library, which was transferred to Mac from Hard Drive back up done from old PC

I purchsased Mac to be seamless transition between all Apple devices but I'm completely disappointed I'm having these issues. Am I crazy? Any help is very much appreciated..
