Picked up a Mac mini 2010 model and proceeded to upgrade the ram to 4gb. This Mac was beeping before constantly so I assumed the ram would fix it. Next it booted no beeps but fans super loud. I tried resetting pram, smc etc nothing changes. So I thought to change the hdd to another spare, same thing grey screen and loud fans. Am I pretty much out of luck?

Are you able to run hardware diagnostics? Hold down 'D' at power on (if I recall).
 
Hold d and it boots so white screen after dvd drive spins and then fan goes high
 
I think I see the problem, a thermal sensor wire is missing, is there any way to use it with only 1?

Don't think so. I had to order two hard drive thermal sensors for my 2010 Mac mini 2.66 off eBay because both were missing and the fan would still run full blast without the second one installed.
 
Well I've changed the hard drive, ram also. Just white screen and super loud fans after the sound of a dvd drive spinning.
 
Update:


Bought another thermal cable and changed the hdd to one that has a Yosemite install and ram and now it boots to a grey screen, no chime no logo but the fans don't blast. Tried numerous keyboard combinations. I'm thinking it's dead unless you have any ideas?
 
I bet someone buggered the board while doing a hard drive swap (not meaning you).

Out of interest, what keyboard combos did you try?

Did you try booting from the CD drive with the install disc?

Well he did change the original hdd and lost the thermal sensor wire with it. I've tried option, command option pr, holding shift, holding c, trying to boot off a usb key with 10.8 on it. Trying to book from a snow leopard dvd etc...

Did you try Command - S or Command - V? Or recovery Command - R?

It sounds bad.
