I am looking to create a traveling A/V system for presentations. The system will be used for virtual meetings. The system will need to run 2 projectors, one for the screen sharing application, the other for IChat. I though about using either 1 or 2 mini's for this purpose. Of course I would prefer one, just not sure how you could connect two projectors without them being mirrored.
Any thoughts?

You can do this with one mini. You'll need a miniDP-DVI/VGA adapter then just plug both of them in and by default your desktop should be stretched across both displays. You can further configure this (mirroring etc) in the display properties in System Prefs.
 
Thanks. I assume that I will need some type of splitter to be able to plug-in the two projectors, since the mini has only one video out.
Also, anyone ever use a conference call type phone with Ichat?

New mini has 2 video out connections, one mini DVI (mini-dvi to DVI adapter included) and one mini displayport. I am using 2 monitors right now.

There are projectors that support VGA & DVI.
