mac mini as a plex server?

I'm trying to figure out of a mid range 2014 mac mini would be powerful enough as a plex server? On my local network i'm streaming to 2 roku 3's, a chromecast, HTPC and an xbox at original quality. I also sometimes stream to outside my network. I am also downloading and extracting large files at the same time.

Currently I use my 2011 27" imac i7 for this. However it just died and am looking for a replacement.

I have the latest entry level Mac mini that I use just for this purpose. The performance is more than adequate, even if it had to transcode anything. But I only stream to a roku box, iPhone, two iPads and my rMB
