If your in need of a computer, just go for it now. If you don't need one, than wait and get one this summer/fall.
I think either way you can't make a bad choice. Its not coming out until Ivy Bridge gets rolling, and am assuming won't be updated again until after the imac/mac pro/macbookpro are refreshed.
Gotta say, I upgraded from my 2009 mini to the 2011 with amd6630 and the difference in power is huge with the sandy bridge cpu's.
EDIT:Also wanted to mention, dont pay apple to upgrade ram, buy 8 gb's online for 40 bucks, installing takes less than a minute. If your up for the hard drive change as well, you can save a fortune doing these upgrades yourself.

Yes it should last you no problems. Waiting is up to you. I never have the patience to wait.
The i7 is a nice machine, but I would save my money on the HD size and the ram and do it yourself. You could spend about the same as you would on the upgrades from Apple and get a decent SSD, 8 or 16gb RAM, and the SATA cable and use the 500gb internal as the spare and the SSD for the boot drive.
The thing with technology....you can always wait and something will be better just around the corner, so this is a hard decision. But the question is...Has Ivy Bridge come out yet? If not then who knows when the new Mac Mini will be available.
As for me the I just purchased a Mac Mini, and for what I use it for I won't lose too much sleep if a better one comes out in a couple of months. Unless it is $100 less, has a Blu-Ray burner, SSD, and 16 GB of RAM ;-)

FYI - i bought a 2007 spec mini (in my sig) in late 2008.
It is now 3+ years old and still happily running Lion server (time machine backup location, torrent download box, essentially a toy for me to play with server).
"will it last me 3+ years" is a very open question and depends largely on your usage criteria.

I have to agree here, you can wait for the: BBD (Bigger, Better, Deal) that is just waiting around the corner. Or you can ask yourself if the current mini will do everything you really want it to do for the foreseeable future to meet your needs and give you a return on your investment.
For me? That came in July of last year when I finally bite the bullet and bought my first new mac ever. A 2011 i5 to replace my Dual 1.8G5. So far? I love the hell out my mini, I did the ram upgrade, kept the stock hard drive. And to be honest have never looked back. I know I will get every penny back I spent on that mac and them some.
For me, it is not about being the guy with the newest toys on the block, it is about having the tools to get done what I want in the most efficient way. So your needs, wants and perspective will all have a huge part to play in either getting in gear and getting that new mac, or waiting for the dust to settle on the "new and improved" mini we have yet to see.
