on YouTube there are quite a few videos about people using their iPad as their main driver, but have an mac mini for the more intensive or multi tasking tasks. This looks actually like a good idea. These days I am really Using my MacBook Pro for “heavy” applications when away from my desk. So rather spending the money on a MacBook Pro, perhaps a mac mini and a regular size iPad Pro / air.

I wonder if any one has already this setup and perhaps could share if there are some caveats with this Approach.

I don’t have this exact setup but considered it for quite a bit before changing my MacBook Pro. I’d say that this setup will work for most of your needs, but it will depend how much you are on the go. If you’re always or almost always at home, having a Mac mini is not a problem. But on the go, you can only do as much as iPadOS allows you to.

I have now a MacBook Pro which is mostly at home, and I downloaded an app to access to my Mac remotely from my iPad. This helps me to access to a software or file that is only on my Mac. I wouldn’t do extensive work on this remote app because it is a bit laggy as you can expect, but overall it is a good compromise that fulfills most of my needs. Because I have a MBP, I can also just bring my laptop when I know I’ll need it, something you cannot really do with a Mac mini. But my setup is also considerably more expensive than Mac mini+iPad.

I considered it at one point but I have pretty much given up on the iPad Pro. iPadOS isn't getting more usable really and even as a simple web browser devices, often you run into issues like some specific website not playing ball so you have to bust out the laptop/desktop anyway.

I'm getting a helluva lot more mileage out of combining my phone and tablet needs with a Samsung Galaxy Fold 4.

If you want to stick with Apple, maybe having a Mac Mini for heavy lifting and a Macbook Air for compact, silent and portable would work better?
