I keep seeing on different forums & YouTube that MacMinis M1 has problems with monitors it doesn't matter if it's a Dell, LG, or BenQ. I was planning to buy an LG 27" UltraFine 5K & the ASUS ProArt Display 27" but now I'm having second thoughts. (Apple Display is out of the question)
It seems that this problem started with Monterey. Is this already solved with the latest OS 12.5?

Is it true that the MacMini M1 does not support more than one monitor?

The M1 MacMini supports two monitors directly connected. I am running a Dell Ultrasharp 4k U2720Q and a Dell Ultrasharp 4k U2718Q on my M1 mini. They are both running at native 4k resolution which most will find too small. What's inconsistent is that the resolutions offered by Monterey are different for these two monitors and I haven't been able to get them to display the same set of scaled resolutions.

So I just use EasyRes to get the resolution that I want.

There are several other similar tools.

I have heard complaints on the fonts with 4k monitors and I have heard that the program, BetterDisplay can resolve these issues but I don't have them myself. I run them at native resolution for production but run them at 3008x1692 outside of work hours.

My m1 Mini is running three monitors: LG 27" Ultrafine 5K and two Dell 27" 2560x1440 monitors, using a DisplayLink dongle for the third monitor. Zero problems in 15 months of operation.

From what I've been reading here in the Forums, most of the m1 problems with monitors are caused by cables that aren't up to specs.

That is a good point. I had problems with intermittent black screens when I got the mini and I ordered better cables made by Cable Matters and those solved the black screen issues. I also had these problems on my Windows system connected to these monitors so it's not strictly an Apple issue.

I can run a third 4k monitor using Airplay, Better Display or Fluffy Display but there is a little lag.
