If I have a thunderbolt monitor with everything plugged in to it (keyboard, mouse, ethernet, USB), will the Mac Mini only require the 1 thunderbolt connection and power? Will it use the displays speakers/camera/mic?

Essentially, can I use a mac mini with only the power cable, and the thunderbolt cable??

That is exactly why the thunderbolt display exists (as opposed to just the LED Cinema Display). As long as the mac itself has a thunderbolt port, one plug and you're good to go! Thunderbolt sends video, audio and data so all ports, camera and speakers on the monitor should function properly with just the one cable.
