I can't answer about whether 8gb of RAM is good enough, but...

... before you buy this, I would suggest that you consider spending $200 more for the 1tb "fusion drive" version.

It will run circles around a non-fusion version of the same model.

I was thinking of get this mac mini with 8gb of ram and i want to if ram is goo for iOS programming and icon edit? What you all think of this here the link?
8GB of RAM should be quite sufficient for the needs you described.
Would this work with duel monitors?
Yes, this model supports "up to two displays" at 2560x1600.

I agree with Fishrrman's recommendation. A fusion drive or even SSD will be significantly faster in performance than a HDD. You can always get an inexpensive external drive for backups and additional storage.

So your saying 8gb good?I got 2 monitors at home and do i need a display port to vga adapter or do i need a different part for the 2014 mac mini?

Fishrrman Is Right

Eight is enough!

All that for under $1000 is a great deal. With FD on that machine you would have improved graphics, Thunderbolt, WiFi, and storage speed compared to prior machines and the 2014 base models.

The similarly sized choice that can outperform the FD* is a large SSD. They cost much more than $200. If dropping prices induce you to switch to a single large SSD, that PCIe hardware would allow you to install a monster with less hassle.

*Read about Fusion Drive function to understand when a single SSD is better than the OS X disk array. For most users and tasks, there is usually not much difference.

8GB should be fine and doesn't affect your machine's ability to run dual displays.

How do your monitors hook up? If they use VGA than yes you'll need to purchase a Thunderbolt Port to VGA adapter. They have those for TB-to-VGA, TB-to-DVI, and TB-to-Mini display port.

I got Mini DisplayPort to VGA Adapter Would this work on the mac mini 2014 Or i need to get the Thunderbolt Port to VGA adapter to?

I got samsung P2770HD and ViewSonic VA2012wb Would this setup work?

VA2012b will work off the HDMI port with a simple HDMI/DVI adapter. If you want to use the original DVI cable, the adapter is bigger. To use an HDMI cable, the adapter just plugs in the DVI port and presents an HDMI port.

1.4GHz Dual-Core Intel Core i5 (Turbo Boost up to 2.7GHz)
8GB 1600MHz LPDDR3 SDRAM
1TB Fusion Drive
Intel HD Graphics 5000
User's Guide (English)
Accessory Kit

I think the better with the ssd drive:)
