The question here is:

How many websites can a Mac Mini Server Serve before you start to run into issues?

A little bit more info:

I woud be running a MySql database with a Wordpress Multisite install to host 50 to 100 Blogs Max. I doubt that all of the blogs combined would get more than 15 - 20k hits per day serving up just wordpress sites, no audio/video.

To go with a Standard solution I would be looking at a Xeon W3530 (like a i7 930) with Cpanel and 6GB of Ram. That setup would run around $2000.

My thought was to get one Mac Mini Server for $999 and then I could always add a second if traffic picks up..

Input?

That should be easy if all sites combine to 15-20k hits per day.

I am doing >5k per day hits on a cheap shared plan, although moving to something better.

You wouldn't have any issues running that amount of traffic. (Though, I can't recommend WP-Cache enough for Wordpress blogs.)

and why have you ompared a machine with significantly better processor and memory to a Mac Mini ?

if you were running _any_ linux distro on equivelent hardware to the mac mini, you would get performance no worse than the mac mini, at probably 1/2 the price.

the big saving with going with commodity hardware will come the first time a hard drive fails in the mac mini...
