I was thinking about the Mac Mini Server with 2 x 256SSD in Raid 0.

On Apple's web site, under the server model it lists:

OS X Mountain Lion
OS X Server

Does that mean it includes the licensed option to install both? Either?

I wouldn't want to install Server and have the server process overhead.
 
OS X server nowadays only is a 24€ app from the App Store.
 
So, I can install Mountain Lion without OSX Server no issues? Cool
 
I think it has to have server on it, but if you dont want to use it you can just leave it switched off.
 
Can't you just use a Mountain Lion installer USB? Wipe it, setup the Raid 0 array, and then install Mountain Lion. I've got a USB flash drive setup for Mountain Lion installs that I've used with a MacBook Air and Pro.
