Mac Mini Server question...

Can I use an Apple Mac Mini Server (Mid 2010, 2.66GHz Intel Core 2 Duo, 8GB RAM, 2 x 500GB HDD, GeForce 320M) exactly the same as a 'standard' Mac Mini?

I won't ever need the 'Server' bits, but must be able to install/run Mountain Lion (and possibly Mavericks at a later date) and some Adobe Creative Suite 5 apps (Indesign, Photoshop, Illustrator and Acrobat Professional).

I'd also want to connect an Apple wireless keyboard, an Apple wireless mouse and an aluminium model (2008) 20" Apple Cinema Display.

Yep, it'll work just fine for that. The rest of your setup will be perfectly compatible too.

Do you know if I would encounter problems upgrading from the currently installed OS X Server 10.6.4 to the 'non server' version of Mountain Lion or would a total wipe and clean install get around that?

I'd totally wipe it. 10.6 Server had different files placed all over. Later versions of server were easier to remove.

Would I have to install Lion first, before Mountain Lion or can I do the jump straight to ML? (I bought a copy of ML from Apple for another Mac and think I can install it again on a different machine).

If you bought ML from the App Store, you can install it on the computers you own. The easiest way to do what you want is to make a bootable ML installer on a USB drive and boot up from that, then format the disk on the Mini and proceed with the install. You do not need Lion in between.
 
Even better, download 10.9 to the 'other Mac', create a bootable installer using DiskMaker X, and jump straight to a lovely fresh reformat/Mavericks installation on the Mini.

Once you take the plunge and move beyond 10.6 there's very little to be said for not going to 10.9.

The reason I want to stick with Mountain Lion (for now) is that I've read that some of Adobe's CS5 apps don't work as they should with Mavericks. I can't afford to be without fully working CS5 apps (for work).
 
Fair enough.

I bought CS5.5 Design Premium before I descended into abject poverty, and haven't experienced any problems. That said, I'm a long way from using the suite to its full extent and I very rarely venture beyond Photoshop / InDesign / Illustrator / Acrobat. It wouldn't shock me to hear that some of the web-oriented apps and collaborative functions have gone wobbly. Adobe probably paid Apple to break a few things... :)
 
Something to do with Java I think. Perhaps the compatibilty problems are now sorted but as I'm perfectly happy with how ML and CS5 are currently working I'd rather not take the risk of messing anything up.

The sensible thing to do would be to keep my current Mac Mini on ML and try Mavericks and CS5 on the new Server model...
