Is it possible to upgrade the video card on the server machine, or are we stuck with the Intel 3000 ?
 
The GPU is most likely soldered onto the logic board so upgrading or adding a GPU is impossible.

However, should an aftermarket Thunderbolt-based GPU appear (like the custom Sony Thunderbolt GPU dock) adding one will be possible.

For the server model, the added GPU would be unnecessary, however I was disappointed to see no option for the Quad i7 with the 6630M. Heat is the most likely and logical explanation. The fan in the Mini already runs constantly at a minimum of 1800RPM, which I find noisy.
 
Is that because of your HDD change? Or is it like that on an Apple drive too?

There are no temperature sensors on the drives anymore, so one can only assume that it is not related. Also, SSDs run cooler than HDDs, so that should have only helped the situation.
 
SMC fan control indicates 1800rpm is the minimum fan speed set by Apple. To find out whether the fan is always on at idle, I'm going to reinstall the 500GB drive and unplug the DualDVI Adapter -> 30" Display to rule out the discrete 6630M GPU as the trigger for the fan being always on.

Intel owns the name, and Sony's implementation isn't Thunderbolt because it's not following the specification...such as not using the Thunderbolt connector.

There are two types of mini-displayport adaptor; the passive type which costs USD$29 and will only display up to 1920x1200, and the active dual-link adaptor which costs USD$199 and outputs 2560x1600 when connected to a 30" Cinema Display or equivalent.

Sony's is called light peak because they followed the original concept which involved using fiberoptic cabling instead of using electical cabling.
