I will be replacing my orginal MacBook 2 GHz Intel Core Duo with 2GB of ram...

Will this be a big upgrade as fast as speed? and over all quickness?

Yes it is a big upgrade.

Much faster CPU, faster graphics, faster HDDs (and two of them), more RAM. It's better in pretty much every way except it's not as portable.
 
Thats just it I don't think I need a mobile computer anymore. I have my iPhone and that does the job while I'm not at home. Plus I have a little one on the way and i figure the server model will give me plenty of storage space for videos and pictures:)

Anyone with a server mini have any gripes about it?

I've read that there are some issues with the Intel HD3000 GPU (23.97 frames and every now and then dropping a frame).

No gripes specific to the Mac Mini server. I've had mine for a week and I'm impressed enough with the performance that I'll be selling my 1,1 Mac Pro 2.66 Quad Core.
 
You can get the mid level Mac Mini with a SSD / 750 GB drive combo option and upgrade it to the server OS. You will get better frame rates. The Server is a quad that could be better for some tasks over the faster dual core on the mid model.
 
I have the Mini server and it is awesome.

If you're a gamer you might consider the dual core model with discrete GPU, if not, the server gives you a lot more for your money.

Lol? I mean, even if you don't know much about processors ... You're comparing a 2011 computer to a 2006 computer.
