When I put my mac mini to sleep sometimes when it wakes up the mouse will work but the display and OS X will be unresponsive. Does anybody know a fix for this?

There's a bug in Yosemite where this will happen if you use HDMI to your monitor and also have speakers or headphones connected to your Mini's 3.5mm audio jack. If that's your case, try unplugging the audio connection from the Mini and test to see if that resolves it.
This is a known issue and has been fixed in 10.10.1
