Is it possible to run two non-apple displays and use the Thunderbolt port for an external drive like the owc helios PCIe via a thunderbolt "hub"?

The mac mini has the same specs as the macbook pro retina performance wise, but it only has 1 thunderbolt port. One monitor would tie up the hdmi and one would tie up the thunderbolt port...and since these monitors are third party non thunderbolt, there is no option to daisy chain them. Apple displays are NOT an option as they are just turrible for professional color work.

Thanks in advance if you contribute to this...

Run one monitor off of the HDMI, and then run one after the Thunderbolt Hard drive.

Mini -> HDMI Port -> Monitor 1
Mini -> Thunderbolt port -> owc helios PCIe -> Monitor 2

Monitor 1 will be limited to 1920 x 1200 so keep that in mind when deciding on what to buy (if you haven't already)

whomp whomp that would require a display with tunderbolt connectivity...and APPLE displays are useless in a professional setting for color work. Thank you for the suggestion though!

Scartch that...sorry I totally see your point, the helios has two ports...thank you!!!
