Mac mini Video card Question

Is it possible to replace the video card with a new one.
I was thinking of updating it to 1gb?

No. It is soldered on to the logicboard and cannot be replaced or upgraded.

Apple rarely has anything upgradable/modifiable in their computers. Typically you cannot do any upgrades other than RAM or adding hard drives if a particular system has the room for it.
