I have a mac mini and I would like to have running parallels with windows 8 and was wondering can I order it with this installed from apple or do I have to do it when it comes and what is the easiest way to do it?

I don't think Apple "installs" Parallels -- you'll just get the software in a box with your order. So there's no point taking back your Mac, to re-order it with Parallels.
True, though is $200 really worth time packing up and returning the old one, waiting for delivery, unpacking the new one and reinstalling everything as you had it before?Except for saving $200 or more by buying from B&H Video

I always find it's useful to "charge yourself" an hourly rate for your time, as a means of working out whether it's better to do it yourself or pay someone else to do it; or in this case, whether the time spent is worth the effort of doing it at all.
