I am trying to see if my issue with a camera is a problem with the camera or the beta. I see "no video capture devices found" when I look in the system. I've never had an issue prior to Mac OS 12 Beta. So, when I try to use any app that uses the camera, I get a prompt that no camera is connected.

I had the same problem. I shut down the computer and rebooted...things seemed to resolve themselves for some reason unknown to me.

looks like your camera module has failed as well. I had this problem when I upgraded to Catalina and then never got it working again. I think even if you downgrade it will show this going forward.

I am running MacOS 12 beta 6 and can use PhotoBooth with 2 video cameras without any obvious problems.

do you have a bootable external drive, possibly with an older macOS version you can try?
