MAC PRO 1,1 > 2,1 Mavericks to Elcapitan

Hi all

i have an MAC PRO 2006 1,1 flashed 2,1 SFOTT ( Tiamo ) with Mavericks 10,9,x / 32 Gigas Ram / ATI HD4870 1024 ( see screenshot )

the actual hard disk ( maverick ) will be on my desk , and make an "TIME MACHINE BACKUP" for DATAS

I would like to know if i can install "ELCAPITAN Piki Installer USB" on new fresh hard disk
my USB INSTALLER ELCAPITAN PIKI is ready

1. this installer put himself the new boot.efi ( 32 or 64 Bits ? ) i am lost
2. my MP 2,1 will be in 3,1 Firmware ? ( it's an noob question i know )
3. if success with install ELCAPITAN Piki , Do desactivate SIP for UPDATE ELCAPITAN ?
4. after install and update success , Could i restore my TIME MACHINE BACKUP ?
5. If not sucess , could i replace the MAVERICK Hard disk to use again Maverick without Troubles ?

Sorry for my questions , and mistakes with my english.

PS : I am French , and if some french peoples have success , they can mp me ..
