I was seriously considering the MPro 2.0, simply because it's the 'base' model, which is what I was holding out buying the base G5 for. I wanted more internal storage options etc, so the Mac Pro delivers for me. I chose the 2.66 in the end though, as the processors are bound to be the most expensive to upgrade... I took the hit now, rather than later.
In terms of comparison, if you're using Photo Shop a lot, then you may consider a refurb'd G5 otherwise with the growing list of Universal Binary apps then IMO the Mac Pro is a definate improvement over the G5 Tower.
The 2.66 is the most economical option [not the cheapest]. Arstechnica calculated that the 2.66 MP would cost about $2400 to build on your own [not including OSX, iLife, the case and power supply which could add $300 to the cost of the machine in hardware alone]

I reduced my system HD to 160Gb, which helped bring the price down a little. (although I added a Bluetooth module). I don't need a large system drive, as I have a couple of external media/docs drives from my iMac which I'll gradually migrate to internal disks, perhaps RAIDed in some fashion... it's a shame they're IDE, otherwise it'd be a simple case of slapping 'em inside and selling the external enclosures.
