So I've looked through the past threads about it already and I can't find the information.

Currently I have 3x 1080p with my Mac Pro over MiniDP to HDMI plus one Active adaptor to DVI then HDMI so even though it's messy it does work, only the DVI adaptor I had some issues with colours that even calibration couldn't get rid of (seems like it can't access the same RGB space over DVI as DP to HDMI).

Well I want to upgrade my setup to triple 4k over miniDP to DP, I thought about the Dell Ultrasharp 4k 60hz panels, my mac pro is a 6,1 with 2697v2, 64gb 1866mhz ECC, and Dual D300s. The new mac pro is nice but quite expensive so literally I can either stick to my trashcan or get a hackintosh on a budget of around 5000 EUR considering I already have the trashcan I would be looking at spending maybe 2500 EUR on monitors for that triple 4k setup. Ideally I would love to have a triple 8k setup but that's far beyond what this machine is capable of without a new gpu and the monitors are still too expensive for me to consider.

So the question is, according to apple you can connect triple 4k but one through hdmi, so would that mean that all monitors would be running at 30hz or would all be running at 60hz? Also if the hdmi port is connected through the thunderbolt 0 bus why can't you connect all three through miniDP with a miniDP to DP cable?

Lastly, should I consider selling this mac and face the fact it's 5 years old and I need to upgrade or am I out of luck if I want something from apple that doesn't require dosdude patches or in short, something stable, native, out of the box, reliable to use as a workstation with macOS catalina and triple 4k screens @60hz. I honestly don't want to have a 30hz workstation.

I ran 2 x Dell 4k monitors (P2715K) @ 60Hz making sure I put the monitors on separate thunderbolt 'channels'. The 6 ports are effectively groups into 3 pairs if you look at the technical specs. I didn't have any issues. I can't see why you can't add a 3rd monitor so long as you are careful which port you plug it into. I used thunderbolt 2 to DP cables.

My MP had D700's don't know if this would make much difference.

I guess we have to wait for someone that actually has 3x displayport monitors or 2+1 hdmi, from what i looked up online 60hz wasn't possible at 4k over hdmi with the standard of the time but it was possible over displayport, the hdmi port is connected through the thunderbolt 0 bus.

I wonder if that hdmi port is a simple passive displayport to hdmi as it would be using a regular cable.

Another option would be an e-gpu but i've seen mixed reviews from that plus not sure it will help much over thunderbolt 2.
 
Looking at Apple's documentation, have two over miniDP as I did, and the third on HDMI. It's an old machine though so I doubt many would have run 3 x 4K displays on it. You might just have to take a plunge.
