The other year there was a modified version of Fancontrol around for the Mac Pro, can anybody point me in its direction please.

Unless... you're looking for Fan Control - the adaptive fan speed control pref pane app...

This version was somehow tuned specifically for the MP by a MR user. This is the discussion thread, and you can download it from here.
