I have a Mac Pro and I want to upgrade the Graphics card

It's a 2009 Mac Pro with stock card.

What is the best card that I can install for this Mac Pro (without hacking the firmware or doing anything technical to "just get it working")

Thank You

HD5770 or HD5870 from the Apple store if you must have something now.

If you wait a bit, there should be a new couple of graphics cards in the near future (what will ship with the next model MP, which is likely to ship between Jan and Feb or so of next year).

I've been on several other sites that say a AMD Radeon HD 6970M 2GB GDDR5 would work without needing to hack on a Mac Pro? can anyone confirm this?

You'd need to pull it out of a laptop/ iMac to make it work:)
The m is for mobility and it is as fast as a 5770 desktop card. I think you mean 6970 for desktop and it works but not without a bit of hacking and some failures and only on hackintosh.
