I have the Mac Pro 3,1. I know that you can upgarde processors but which processors can I upgarde to and where can I buy them from?

X5482, X5492 should work just fine. 3.2GHz and 3.4GHz Quad's. You'll gain roughly 3000+ points in geekbench moving to the 3.2. The 3.4 was never released for Apple products but most likely will work and maxes out the line.

You're wrong ! The only test that will work are SLA series so:

X5472 3.0 GHz SLASA 120W
E5472 3.0 GHz SLANR 80W (low power consumption than X5472 and X5482 so this is best buy !)
X5482 3.2 GHz SLANZ 150W
X5492 3.4 GHz is only SLB so won't work - don't buy !

I'm using 2xE5472 SLANR with no problems.
