I'm planning a RAM upgrade on a Mid-2012 Mac Pro (1xQuad 3.2, with factory DDR3 3x2=6GB 1066 ECC Ram). Will any 1333 Mhz ECC memory work?

I won't say any RAM will work, but most of the 1333MHz ECC UDIMM should be OK (as long as it support to run at 1066MHz CL7)

The stock RAM that came in your machine is 1333MHz rated RAM. The OEM 3.2 GHz Quad Core CPU (W3565) will only handle RAM speeds up to 1066MHz. So it isn't the RAM that's holding the memory speed back, it's the CPU.
