I noticed there are some unfamiliar system extensions being blocked in the Security & Privacy section of the System Preferences. I did a little Google-fu and have come to the conclusion that most (all?) of these are related to the Mac Pro.

I'm on a 2019 16" Macbook Pro, not a Mac Pro. I don't have OWS hardware.

Is anyone else seeing this?

I wouldn’t say they’re specific to the MacPro as three of those brands are used or have been used by me with my iMacs (OWC, Promise, ATTO).

They just look like Thunderbolt storage vendors to me.

Haven’t got a clue why they’re blocked though. Maybe they were just included in the beta for testing, and if you need one of them you can just allow it in the security panel.

Have you got Bluestacks installed? As they showed up when I installed Bluestacks (and I can't get it working due to not sort those).

I think that most kext are blocked in BigSur and those seems to be drivers for some storage products.
