Depends on what you want to do. General purpose = X1900. CAD/Visualisation = FX4500. The X1900 is merely 'very respectable' these days compared to 'cutting edge' but still capable.

No...wsgroves has confirmed for the BFG 8800 GTX to work in his Mac Pro under Boot Camp.
Thats what I would get if I were serious about gaming (Although, remember you shall have to get something else to run in OSX. Either the stock 7300 or the X1900. Or maybe even the FX4500)

mac pro in boot camp with multiple video cards
ok so i'm a complete nerd and i got a second video card off ebay for my mac pro. it's a second NVIDIA GeForce 7300 GT or whatever the basic card is that let's you use 2 more monitors (for a total of 4, i'm only using 3).
all is well in osx (everything just works ) but in windows, through boot camp, only 2 monitors work. in the windows hardware device manager it doesn't recognize some of the PCIe slots thus giving me the reason why the third monitor wont work (because windows doesn't "just work" and doesn't see the second video card).
so here's my question: do i need to wait for this to get figured out by apple in some future boot camp update or is there a good "windows fix" that'll let windows see the remaining PCIe slots and thus revealing the second video card?
