I'm hoping to get a macbook or macbook pro and connect it to a 30inch cinema display.

Is this possible?

A MacBook does not have a dual-link port so cannot drive the 30" Cinema display at full resolution (iirc it is capped to 1900x1200). The MacBook Pro does have a dual-link port and can drive the screen to it's full capacity.
 
Either one can connect to the display, but the Macbook cannot use its maximum resolution.

The Macbook cannot display a resolution higher than 1920x1080 (1080p) on whatever screen is connected, even if that screen supports something higher.

The Macbook Pro can display resolutions up to 2048x1536.
