The 2021 M1 MBP's already support Wi-Fi 6. That being said, I don't think any ext USB/Thunderbolt based Wi-Fi 6 adapters exist which support macOS. To achieve similar, you could use a Wi-Fi 6 Ethernet Bridge (if you can find one) or configure a Wi-Fi 6 network access point in bridge mode.
