Simple question. I assume this is true, but does the date highlighted in yellow reflect the manufacture date of this SSD by Samsung/Apple?

I think you can make a reasonable assumption that's the month and year that SSD was manufactured.
The only reason I questioned it, is because it was pulled out of my Mid-2015 Macbook Pro.

Yes.
The Mid-2015 MacBook Pro was sold new by Apple for more than 3 years - May 2015 to July 2018 - so the June 2017 date on the original SSD is certainly within that time - and also probably means that your 2015 was manufactured/sold in mid to late 2017
