Why is it that some websites come up as just the logo on the touch bar and others have the website name next to it in bookmarks?

I tried to delete the website name, to which it reverted to having it’s name next to the logo. I also tried to replace the name with a space, and that also did not work.

So, after talking to Apple for nearly an hour, I figured out the issue. It's stupid, and it's definitely something that needs fixed on Apple's end. But, for now, here's the fix.

Go into your bookmarks. If you bookmarked, say, your gmail account, chances are the address is mail.gmail.com. Change that to gmail.com

If you bookmarked your Facebook page after you were signed in, change that address to just facebook.com.

You get the idea.
