Over the last few years I've collected a few email addresses. Many of these accounts are now obsolete and have been removed. However, they still appear as an option to send from - I have my icoud address as my default but would like to remove these others. Is there any way to do this? Thanks
 
You might try going to Mail > Settings > Accounts and unchecking "enable this account" from any you don't use anymore. That will definitely stop them being addresses that come up as From when you're composing a new email -- but they will also be disabled entirely otherwise.

Go to Setting, select the Server Setting, then Edit the STMP list and delete the old servers. This assuming your different accounts were on different servers (Gmail, Live, Apple, local ISP etc).
 
Try going to 'Window' in the bar at the top then look for 'Previous Recipients'.
You can select and remove any email that's been used there including the ones you send from.
I haven't tried to remove any of those myself though.
