The server aspect of Lion Server is a service that's built into the OS. If you don't wish to to run any Server features, then don't worry about it; all the Server Features are off be default and the OS can be used normally.
In fact, I have the 2011 Mini Server myself and use Pages, Safari, and other application just fine. It's labeled Server because it's more apt to perform server functions (quad core, dual hard drives) but those same hardware boosts are handy for other tasks the user would like to do instead.
