Do you have any knowledge about what has been fixed or improved under the hood since Catalina?

This is not about whether Big Sur has now rounded corners on turd emojis but I would like to focus on stability, file system, background tasks/daemons and things like that.

To illustrate the point, on Catalina on a Mac Pro 2019 Adobe Bridge was running up to 700% CPU power when sitting idle. After months of communication with Adobe they started to blame it on Catalina which I am still running at the moment. Having had bad experiences with Catalina from the get-go (Mojave was far more stable) I was hesitant to update to Big Sur.
Therefore I am interested if there is any helpful techy information and if anyone can contribute with their experiences that might help me shine a light on what might be going on and if things have improved since then.

Generally, security is better. The isolated System Volume is more isolated, and can't be tampered with, whereas under Catalina, it could.
I have not noticed any significant difference with performance.

Catalina was super steady as far as I remember, with BS i'm noticing some random shutdowns of my 2018 MBP when it's sleeping, due to GPU reasons. But except those, its the same as Catalina, although it didn't play well with Final Cut Pro at the beginning, but now is being fixed after the FCP 10.5.3 update.

If I want to try Big Sur on 7.1 MP can I revert back to catalina? I have a time machine backup, is there anything else I should do?
