I have a Mac Pro 5,1 with dual X5690, Highpoint 7101A, AMD 6900 XT and Wi-Fi/BT upgrade.
The 7101A has room for 4 NVME drives but for years I have only been running a single drive with macOS with the assistance of OpenCore Legacy Patcher. I will stick with Monterey as this is currently the latest macOS with support for 6900 XT. I also have a old spinning drive with Mojave and a SATA SSD that has been running Windows 10. All good.
What I'm looking for is to add a couple of NVME drives; one for Windows 11 and one for Linux (Ubuntu likely) and have them selectable from the Boot-picker. Windows 11 seems to be covered here but I'm a little unsure what the right approach for Linux is. Some guides seem to recommend installing it without any other drives attached and then manually add some drivers from OpenCore for integration with the Boot-picker afterwards.
Any recommendations, caveats to look out for?
